Basic Whole Wheat Pancakes

2 ½ cups whole wheat pastry flour, freshly ground if possible
2 T baking powder
1 t. salt
2 eggs
2 cups milk
¼ cup light olive oil
Mix dry ingredients together. Add milk, eggs and oil and stir until just
blended. Bake on a medium hot to hot griddle until bubbles appear and the
pancakes are nice and golden brown.
