Favorite Sugar Cookies

1/2 cup butter
1/2 cup Sucanat
2 Tablespoons milk w/ 1/2 tsp. Soda dissolved in it
1/2 teaspoon vanilla
1 egg, beaten
1 pinch of salt
2 cups whole wheat pastry flour
Cream butter and sugar in a mixer, beat in the egg. Add milk in which soda has
been dissolved, vanilla, salt and flour. Mix until dough forms. Chill for 20
minutes or so. You don’t want the dough to be sticky. If the butter warms up
while you are working with the dough, simply put it back in the fridge and wait
15 minutes and try again. Roll the dough to 1/8 of an inch thickness or so. Dip
cutters in flour before cutting out cookie. Bake 350 for 9 minutes.
