Simple Cheesecake

 


 2 8 oz. pkgs. Cream cheese, softened

1/3 cup Sucanat or cane juice crystal’s  (the Sucanat will give the cheesecake a bit of a darker color)

2 t.  vanilla

2 eggs

1 9” graham cracker crust, recipe follows

 

In a mixer at medium speed blend cream cheese, Sucanat and vanilla until well blended.  Add eggs one at a time and mix well after each addition.  Pour this into the graham cracker crust and bake at 35o for 30 to 40 minutes or until the center is almost set.  Cool on the counter and then refrigerate overnight or for several hours before cutting.

1 ½ c. graham cracker crumbs (I buy my graham crackers from a health food store or my co-op.  I can’t recommend grocery store graham crackers because of the unhealthy ingredients in them)

¼ c Sucanat

1/3 cup melted butter

 

Mix all ingredients together and press into the bottom and sides of a 9” pie plate.  Set this in the refrigerator for a few minutes before pouring filling in.  It will help the crust to solidify and not fall apart when filling.
