Russian Tea Cakes
1 cup soft butter
½ cup powdered sucanat or powdered sugar
1 t vanilla
1 t salt
2 ¼ cups whole wheat pastry flour
¾ cup finely chopped walnuts
In a mixer bowl add butter, powdered Sucanat, vanilla and salt. Mix on low speed for 1 minute or until well blended. Add flour and mix until just blended and stir in nuts.
Roll dough into 1 inch balls and place on an ungreased cookie sheet, about 1 inch apart. Bake at 350 for 10 to 12 minutes. The cookies should be firm but not too brown. Be careful not to over bake.
Roll in extra powdered Sucanat, once while warm and again after they have cooled.
