Red Bean & Sausage Soup

3 Cups red beans

14 cups water

1 T salt

1 cup brown rice

Ĺ to 1 lb. sausage or kielbasa cut up small

 

In a large stock pot combine red beans and water and salt.  Bring to a boil, reduce heat, cover and simmer for 2 hours.  Add rice, return to boil and simmer 1 more hour.  Near the end of the of cooking time brown the sausage (unless you are using kielbasa) and add to the soup.  Let this simmer a little to blend flavors.   I like to add Tabasco Sauce to this soup but then my family does not mind spicy food.  If you donít want to season the whole pot of soup just add the Tabasco Sauce to individual portions. 

 

This recipe makes a lot of soup and the recipe can easily be cut in half if you donít need as much.  Or take the leftovers and put them in the freezer for another meal.  When you defrost your soup you may need to add a little bit of water to thin it out again.
