Pork and Carrots with Honey BBQ Sauce

1 ½ pounds boneless pork roast, cut into small pieces (chicken breast may also be used)
2 T olive oil
1 1-lb. sliced carrots or baby carrots
1 recipe homemade barbecue sauce (recipe follows)
1/2 cup honey
1/2 tsp. salt
1/4 tsp. pepper


In a cooking pot on the stove top, cook meat in olive oil until browned and nearly done.  Add remaining ingredients and let this simmer, covered, on low for about 30 minutes making sure carrots are nicely cooked and flavors have blended.  Serve this over brown rice and add green beans, slices of homemade bread and applesauce for a delicious dinner!

Barbecue Sauce

½ med. Onion, chopped
¼ cup light olive oil
1 8 oz. can tomato sauce
½ cup water
¼ sucanat
¼ cup lemon juice
3 T. Worcestershire sauce
2 T. prepared mustard
2 t. salt
¼ t. pepper


In a small sauce pan cook the onion in the olive oil until tender. Add the remaining ingredients and simmer uncovered for about 15 minutes.
