Old Fashioned Tapioca Pudding

1/3 cup tapioca pearls (not the instant kind)
¾ cup water
2 ¼ cups milk
¼ t. salt
2 eggs, seperated
½ cup cane juice crystals
½ t vanilla

In a 1 ½ quart sauce pan soak the tapioca pearls in the water for at least 3 hours, longer is fine. After soaking time is up add the milk, salt and egg yolks stir well and heat on medium heat until boiling. Turn heat down to very low and let it cook for another 30 minutes. Stir this occasionally. In a smaller bowl mix egg whites and cane juice crystals. When the milk mixture has finished its cooking time, remove from heat. Add some of the hot milk mixture to the egg whites and cane juice crystals. stir quickly and well so the egg whites don’t cook. Add a little more and stir and then add all of the egg white mixture into the milk in the saucepan. Return to low heat and cook for another 3 minutes, stirring constantly. Remove from heat and cool for 15 minutes. Add vanilla. Serve warm or cold.
