Oatmeal Spice Cake

1 ¼ cup boiling water
1 cup oats
½ cup butter
2 cups sucanant
2 eggs
1 ½ cups flour
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking soda
½ tsp salt
1 tsp vanilla
Pour boiling water over oatmeal and let set 20 minutes. Cream butter and sugar
well. Add eggs and vanilla. Blend in oatmeal. Mix dry ingredients into the
mixture. Bake in greased and floured 9x13 pan for 30-35 minutes at 350 degrees.
Topping
2/3 cup sucanant
1 cup chopped nuts
1 cup coconut
6 T melted butter
¼ cup cream
While cake is still hot from the oven, spread the topping on. Put under broiler
for about 2 minutes or until it is golden brown.
