Oatmeal Raisin Cookies (big batch)

2 c butter, softened
c coconut oil
1 c Sucanat
1 c cane juice crystals
2 eggs
2 t vanilla
3 c ww pastry flour
2t baking soda
2t cinnamon
1t salt
t nutmeg
6 c oats
2c raisins

Preheat oven to 375. Using a large mixer cream the butter, coconut oil, Sucanat and cane juice crystals until creamy. Add the eggs and vanilla and mix well. Add ww pastry flour, baking soda, cinnamon, salt and nutmeg. Mix well. Add oats and mix until all is well combined. Stir in raisins.

Drop by tablespoonfuls onto ungreased cookie sheet and bake for 8 to 9 minutes.

This recipe will make approx. 8 dozen cookies..
