Nadine’s Chocolate Chip Cookies
1 c cane juice crystal’s
1 c Sucanat
2/3 c butter
2/3 c coconut oil or palm oil
2 eggs
1 t. vanilla
3 c whole wheat pastry flour
1 t baking soda
1 c chopped nuts, optional
1 c chocolate chips
Heat oven to 375. In a mixer combine sugars, butter, oil, eggs and vanilla. Stir
in remaining ingredients.
Drop by teaspoonfuls onto an ungreased cookie sheet about 2 inches apart. Bake
until light brown, 8 to 10 minutes. Cool slightly before removing from cookie
sheet and enjoy!!
Makes about 7 dozen cookies.
