Marinated Cucumbers

 

2 to 4 large cucumbers, peeled and sliced in coins

1 sweet onion, sliced

6 T cider vinegar

2 T cane juice crystals

a few shakes of dried dill or 4 to 6 T of fresh dill

salt and pepper, to taste

 

Put sliced cucumbers and onion slices in a bowl or zip type bag.  In a small bowl mix remaining ingredients.  Pour this over the cukes and onions.  Put in fridge for an hour or so.  If they are in a zip type bag then simply turn the bag every now and again or if in a bowl, stir them so that they can be nicely marinated.
