Lentils and Brown Rice for Tacos

 

1 cup lentils

4 cups water

1 t salt

1 sweet onion, chopped very small

1 lb. hamburger (or less, the meat adds flavor)

2 cups cooked brown rice

¼ c taco seasoning

 

In a medium sauce pan combine lentils, water, salt and chopped onion.  Bring to a boil, reduce heat, cover and simmer for 40 minutes.  When lentils are just about done cook and brown hamburger in a large frying pan.  When the hamburger is completely cooked add all the lentils (liquid and all), the rice and the taco seasonings.  Let this simmer about 5 to 10 minutes to blend flavors and reduce liquid a little. 

 

Serve this in tortillas along with shredded cheese, lettuce, tomatoes, salsa and sour cream and enjoy!!
