Hash Brown Potatoes and Ham

For this recipe to be quick you will need to plan to have ham in your freezer or make this meal the next day after cooking up a ham.  I find the best time to buy ham is around Easter.  I will usually stock my freezer with them at that time.  If this is something you can’t do then I would suggest trying turkey ham.  They are inexpensive and taste good.  If you buy a large one you can cut it in pieces and bag and freeze meal size portions. 

For this quick meal you will need, potatoes (as many as necessary to feed your family), olive oil, and ham.   Heat up your griddle or frying pan with a little olive oil added to it.  While that is heating up wash potatoes and grate them (admittedly a food processor makes this job go very quickly and is what I use).  Spread the potatoes in the frying pan or griddle as thin as possible (if you like them crisp) and cook until they are nicely browned on one side and flip and do the same on the other.  You can break them up as you are cooking them.  I then transfer these to a serving dish and keep them in a warm oven until I am finished. I usually have to do t! his in batches with the amount of potatoes needed for my family.  When I am done I quickly heat up my ham on the same griddle, adding a bit more oil if necessary until it is nice and hot and then mix this in with the potatoes.  I serve this with a salad or cooked vegetable.  My family puts ketchup (fruit sweetened, bought from the health food store) on these for eating.  This meal uses some pretty basic ingredients and is quite versatile.  You can use hamburger or leftover meats of any kind in place of the ham just as easily.
