Fudge Brownies
1/2 C butter
1 3/4 C cane juice crystals or Sucanat
2 eggs
2 t vanilla
1 1/3 C WW pastry flour
2/3 C. cocoa powder
2 t baking powder
Chocolate chips, grain sweetened if possible
In a medium sauce melt butter and add the cane juice crystals (or Sucanat) and
stir until the sweeteners dissolve or soften up slightly. Remove from heat and
add the eggs and vanilla. Stir this well and add the remaining ingredients
except the chocolate chips. Spoon and spread this into a 9 inch pan (no need to
grease the pan). Bake at 350 for 15 to 20 minutes. After they have cooled cut
them into squares and serve to your eagerly waiting family.
This recipe can be doubled and baked in a 11x15 pan.
