Easy Cheesecake

Serves 8

Oven 350 degrees



1. Mix at medium speed until well blended:

2 packages (8 oz. each) cream cheese, softened

1/3 c. fructose, honey or Sucanat

(Sucanat will make it a brownish color)

1 - 2 t. vanilla, lemon or orange extract

2. Add blending well:

2 eggs

3. Pour into prebaked 9" graham cracker crust.

4. Bake at 350 degrees for 40 minutes or until center is almost set.

5. Cool and refrigerate 3 hours or overnight before cutting.

Graham Cracker Crust
1 - 9" pie crust

Oven 325 degrees



Mix:

1 1/2 c. graham cracker crumbs (about 20 rectangles)

1/4 c. Sucanat

1/3 c. melted butter



Press into the bottom and sides of a 9" pie plate. Bake at 325 degrees for 10 minutes. I didn't cool mine before pouring in cheesecake batter and it worked fine.
