Delicious Carrot Cake
1 cup light olive oil
1 ½ cups honey
4 eggs
3 cups whole wheat pastry flour, make sure to pack the flour in the cup if you
are using freshly ground flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3 cups grated carrots
½ cup raisins
In a mixer bowl combine oil, honey and eggs. Mix until well blended. In a
smaller bowl combine dry ingredients and add to oil honey mixture and mix well.
Fold in the carrots and the raisins. Pour batter into a 9 x 13 pan that has been
sprayed with a non-stick cooking spray. Bake cake at 325 for 45 to 50 minutes or
until knife inserted in the center comes out clean. This can be eaten as is or
frosted with cream cheese frosting when cooled.
Cream Cheese Frosting
8 oz. cream cheese, softened
1 cube or stick, butter ( ½ cup ), softened
4 T. honey or fructose
milk
With a mixer, beat together cream cheese and butter until smooth. Add the honey
or fructose to blend. Add only enough milk to make a nice smooth frosting
consistency
