Cowboy Cookies
3 cups whole wheat pastry flour
1 T. baking powder
1 T. baking soda
1 T. cinnamon
1 t. salt
3 cubes butter (1 1/2 cup)
3 cups sucanat
3 eggs
1 T. vanilla
1 heaping cup chocolate chips
3 cups rolled oats
1 heaping cup coconut
1 heaping cup chopped pecans
Preheat oven to 350. In a mixer bowl cram butter and sucanat until creamy… it
is hard to get it real smooth with the sucanat, so just try for well mixed and
creamy. Beat for about 2 minutes. Add eggs, one at a time and add the
vanilla. In another bowl mix all dried ingredients together and add to the
butter mixture. Mix until just combined and add chips, oats, coconut and
pecans.
These cookies are large cookies, so for each one drop ¼ cup of dough onto an
ungreased cookie sheet. Space them about 3 inches apart. Bake until the edges
are lightly browned, about 17 to 20 minutes.
