Cinnamon Oatmeal Waffles
2 cups buttermilk
2/3 cup rolled oats
2 T butter, melted
1 t vanilla
1 ¼ cups whole wheat pastry flour
2 T Sucanat
1 ½ t. baking soda
½ t. salt
½ t. cinnamon
The night before your serve these mix the buttermilk and oats together, cover and refrigerate until morning. In the morning melt the butter and let it cool slightly while you add the egg and vanilla to the oat mixture, then add the melted butter. In a smaller bowl mix the dry ingredients. Add this to the buttermilk oat mixture and mix.
Bake these according to the direction on your waffle iron. They are delicious served with a fruit syrup or pure maple syrup or homemade Sucanat syrup.
