Double Chocolate Snack Cake

1 2/3 cup whole wheat pastry flour
1 c Sucanat
¼ c cocoa powder
1 tsp baking soda
½ t. salt
1 cup water
1/3 cup light olive oil
1 t. vinegar
¾ t. vanilla
½ cup chocolate chips, grain sweetened if possible

Preheat oven to 350. In a mixing bowl combine flour, Sucanat, baking soda and salt. Mix well. Add water, oil, vinegar and vanilla and beat until smooth. Pour into an 8x8 pan that has been greased or sprayed with a non-stick cooking spray. Sprinkle the chocolate chips over the top. Bake 35 to 40 minutes or until a toothpick comes out clean when inserted in the center of the cake. Cool on a wire rack.

This recipe can be doubled, which is what I do and baked in a 9x13 pan. The baking time increases by 5 to 10 minutes.
