Chocolate Chip Cookies
2 cups whole wheat flour, freshly ground preferred
1 cup oats
¾ cup butter
1 ¼ cup Sucanat
2 eggs
1 t. vanilla
1 t. baking powder
1 t. salt
1 cup chocolate chips, grain sweetened (can be found in health food stores)
I have always made cookies in a large stand type mixer such as Kitchen Aid or
Bosch and that is my recommendation for these.
In a mixing bowl mix butter and Sucanat until combined. Add and continue mixing
well, eggs and vanilla. Now add all the dry ingredients, flour, oats, baking
powder and salt. When this has mixed well add chocolate chips.
Drop onto ungreased cookie sheet leaving room to spread. Bake them at 350 for
about 10 minutes. Allow to cool on tray for a minte and transfer to a rack or
towel on the counter to finish cooling. This makes about 3 dozen. Enjoy!
