Basic Whole Wheat Cake
¾ cup butter
2 cups Sucanat
2 eggs
2 t vanilla
3 cups minus 1 T whole wheat pastry flour
2 ½ t baking powder
½ t salt
1 1/3 cups milk
In a large mixer cream butter and Sucanat. Add eggs and vanilla until well
blended. In a small bowl mix flour, baking powder and salt together. Add this to
butter mixture alternately with the milk. Beat until smooth after each addition.
Pour the cake batter into a 9x13 inch pan that has been sprayed with non-stick
spray and bake at 350 for 30 to 35 minutes or until fork poked in the cake comes
out clean and cake has begun to pull away from the sides.
Frost this with your choice of frosting. We like Cream Cheese Frosting on it.
Cream Cheese Frosting
8 oz. cream cheese, softened
1 cube or stick, butter ( ½ cup ), softened
4 T. honey or fructose
milk
With a mixer, beat together cream cheese and butter until smooth. Add the honey
or fructose to blend. Add only enough milk to make a nice smooth frosting
consistency.
