Crystal’s Basic Chocolate Cake
½ cup butter
2 cups Sucanat
2 eggs
½ cup cocoa powder
½ cup hot water
1 cup buttermilk or sour milk
2 cups whole wheat pastry flour, slightly packed if freshly ground
1 t baking soda
¼ t salt
1 t vanilla
In a mixer cream together butter and Sucanat. Add eggs and mix well. In a small
bowl (or glass measuring cup) mix hot water and cocoa powder together. Add this
mixture to the buttermilk. In another bowl mix flour, baking soda, salt well.
Add the flour and milk mixtures alternately to the creamed butter and Sucanat,
mixing well after each addition. Add vanilla. Pour the batter into a 9x13 pan
that has been sprayed with non-stick spray. Bake at 350 for 35 to 40 minutes.
