7 Minute Frosting
1 c cane juice crystals
1/3 c water
¼ t cream of tartar
2 egg whites
1 t vanilla
In a sauce pan combine the cane juice crystals, water and cream of tartar. Bring
to a boil and stir until the cane juice crystals dissolve.
In a mixing bowl (or a Kitchen Aid) beat 2 egg whites until frothy and then
slowly add hot syrup to the whites while beating constantly with the mixer.
Continue beating for 7 minutes. Add the vanilla.
Should be enough frosting for a 9x13 cake or 8 (or 9) inch layer cake
