Quick and Easy Cake
Cake:
1 cup cane juice crystals
1 cup whole wheat pastry flour
2 t. baking powder
2 eggs
½ cup milk
1 t vanilla
Topping:
¾ c. coconut
½ cup Sucanat
1/3 cup butter
¼ t salt
In a mixing bowl combine all cake ingredients. Pour batter into an 8” pan that
has been sprayed with non-stick spray. Bake at 375 for 20 minutes. While the
cake bakes combine topping ingredients in a small saucepan. Stir and mix well
until the butter is melted. When the cake comes out of the oven spoon topping
over the hot cake. Bake another 10 minutes at 400 degrees until the topping is
golden.
You can double this recipe and bake in a 9x13 pan. You may need to bake an
additional 25 minutes.
